A Full Freezer

This month's swap was great!!! I have a full freezer and the best part is that through this we as a group were able to minister to an elderly couple in need. One of the ladies in the group found out about this elderly couple that literally sometimes has no food and are on a very fixed income so we each made something extra for them and also put together some food from our own pantrys.


What's for dinner this month (and next):


Egg rolls and Chicken fried rice, Sloppy Joes, Taco Chili and corn bread muffins, Santa Fe Chicken, Taco meat, Chicken spaghetti, Chicken spinach enchiladas, sausage egg breakfast burritos, meatballs, chicken fajitas, spaghetti and meatballs, pasta fagioli, 2 meat loaves, 3 taco meats, 2 different marinated chickens, 3 things of ground beef for spaghetti or whatever, 2 things of ground beef for noodle casserole.

Here is a favorite and easy recipe of mine I will share. I can't take credit for it though I got it from some one on a yahoo group. It's great because you can prepare it in the morning and just pop it in the oven for about 15 minutes for dinner. It's espically easy if you have the ground beef already cooked up.


Noodle Casserole


1 bag egg noodles 1-2lbs ground beef or turkey


1 package light cream cheese 1 small tub light sour cream


Shreded cheddar cheese olive oil, lawrys seasoning salt


Pre cook the meat and noodles. When noodles are done put them in a rectangular baking dish sprinkle with olive oil and seasoing. After meat is cooked put it in a bowl and mix in the cream cheese and sour cream. Dollop this mixture on top of the noodles. Sprinkle cheddar cheese on top. At this point put in the fridge for dinner later. To heat: pre heat oven to 350' bake for 15 minutes until cheese is melted on top.


This is a very easy and forgiving recipes you can play with the ingredients. Serve with veggies and or a salad and it is a great dinnner that the kids really like.
